Victoria Sponge Cake! I’ve never baked a sponge before, but I saw the most beautiful picture of one online and I couldn’t think about not making one. Strawberry jam and all! It was relatively easy. I used Paul Hollywood’s recipe but creamed the butter and sugar together first. I also added a tsp of vanilla.

It came out better than good. I don’t think I’ve ever had such a good cake before. I might need more circle pans of different sizes and maybe a container for storing cake. I wrapped this in plastic wrap and that does nothing to keep it fresh.

Our kitchen faucet had been broken for a few weeks. Broken in that it leaked water all over the countertop. We finally replaced it on Saturday after discussing getting a taller faucet. The previous stainless model was the short, builder basic one that’s been in most of my homes. Relatively speaking, an upgraded faucet is a pretty inexpensive change that makes doing dishes easier, like when rinsing a large soup pot.
I’ve been noticing black faucets have been popular lately so we went with the Glacier Bay Paulina model from Home Depot. At the time of writing, it’s less than $120. It matches the granite, which was chosen by the previous owner.

While we were running around town getting the faucet, J needed to pick up something for work at Target. I wandered into the Starbucks and the espresso machine was down. So I picked up a Dragonfruit refresher. I think they look so pretty. I also bought a new tumbler. The color combos in this picture please my eyeballs. Also, did you know you can’t tip the Target Starbucks baristas? I asked where the tip jar was, and she told me this wan’t allowed.
